Why it works: Syrup and sugar match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 5,842 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rectified spirit
Dissolves the aromatic compounds from the herbs and seeds, carrying their flavour into the distillate.
Wormwood tops
Provides the bitter, herbal character that defines absinthe.
Aniseed
Adds the sweet, licorice-like aroma associated with anise.
Sugar
Adds sweetness to the syrup, softening the bitterness of the herbs.

The step that matters

Distill off 6 quarts at moderate heat. Heating too hard can carry harsh, bitter or burnt compounds into the distillate along with the desired aromatics. Moderate heat lets the lighter, more pleasant volatile oils come over more cleanly.

Swap the calamus

How well each one fits the dish's main ingredients (spirit, angelica, syrup, sugar):

  1. Cinnamonfits better
  2. Gingerfits better
  3. Nutmegfits better
  4. Calamusthe original

Fit is the average pairing score against spirit, angelica, syrup, sugar. Candidates are from the same food group and used in at least 100 recipes.
