Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Cut off the crusts of the rolls and grate them.

  2. Mix the crumbs with the cream, almonds or pistachio nuts, and sugar.

  3. Add the yolks of the eggs and mix well, then fold in the whipped egg whites and cherry-water.

  4. Butter a mold and sprinkle with bread-crumbs.

Bake and serve

  1. Garnish with puff-paste, pour the batter into the mold, and bake at 400°F (200°C) for about 45 minutes.

  2. Serve with a sauce made of sugar and water mixed with cherry-water or cream.

What each ingredient does

White halfpenny rolls
Grated crumbs form the body of the pudding, soaking up cream to set a soft, tender structure.
Cream
Adds richness and moisture, softening the crumbs into a custard-like batter.
Eggs
Yolks enrich and bind the batter, while whipped whites lighten it and help it rise and set.
Almonds or pistachio nuts
Add flavour and a slightly oily richness that adds body to the batter.
Sugar
Sweetens the batter and helps the crust brown lightly in the oven.

The step that matters

Fold in the whipped egg whites. Whites must be folded gently so the air they hold is kept. Overmixing deflates the foam, leaving a denser pudding that rises less during baking.

Swap the cherry

How well each one fits the dish's main ingredients (cream, almond, sugar, egg, butter, bread):

  1. Vanillafits better

  3. Coconutfits better
  4. Cherrythe original

Fit is the average pairing score against cream, almond, sugar, egg, butter, bread. Candidates are from the same food group and used in at least 100 recipes.
