Sweetmeat Biscuits

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the biscuits

  1. Cut the Naples biscuits into 1.5‑inch squares and 1‑inch thick pieces.

  2. Place the pieces on a wire rack and crisp them in a 400°F (200°C) oven.

Ice and decorate

  1. In a bowl, mix the egg whites, sugar, and orange flower water to make icing.

  2. Dip one side of each biscuit into the icing.

  3. Chop the sweetmeats into small pieces and sprinkle them over the iced side of the biscuits.

  4. Return the biscuits to the wire rack and place them in the oven to harden the icing.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whip-free binder that sets in the oven to form a crisp, glossy icing.
Sugar
Sweetens the icing and helps it harden into a crisp, brittle coating.
Naples biscuits
Form the crisp base that the icing and sweetmeats are set onto.

The step that matters

Hardening the icing in the oven. Egg white and sugar set into a crisp coating only when dried gently in the oven. Too much heat or time can scorch the sugar and brown the icing before it firms.

Swap the orange

How well each one fits the dish's main ingredients (biscuit, egg, sugar, lemon):

  1. Vanillafits about as well
  2. Orangethe original
  3. Blueberryfits about as well
  4. Limefits about as well

Fit is the average pairing score against biscuit, egg, sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
