Lemon Biscuits

Ingredients

Directions

Make the dough

  1. Finely pound the almonds in a mortar with the egg whites until you have a smooth paste. Mix in the powdered sugar thoroughly.

  2. Zest the lemons and add the zest to the almond and sugar mixture.

Shape and bake

  1. Drop small rounds of the mixture onto a sheet of paper, about the size of a nutmeg, leaving space between each. If the oven is too hot, place sheets of paper under the biscuits to prevent burning.

  2. Bake until lightly golden, then let them cool completely before removing from the paper.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the main body and nutty flavour of the biscuit paste.
Powdered sugar
Adds sweetness and bulk, helping the paste hold its shape.
Lemons
Zest supplies the bright lemon aroma and flavour.
Egg whites
Bind the ground almonds and sugar into a smooth, shapeable paste.

The step that matters

Baking temperature control. If the oven is too hot, the biscuits can scorch before they set and turn golden. Sheets of paper underneath help protect the bottoms from burning.

Swap the almond

How well each one fits the dish's main ingredients (sugar, lemon, egg):

  1. Pistachiofits about as well
  2. Milletfits about as well
  3. Almondthe original
  4. Chickpeafits about as well

Fit is the average pairing score against sugar, lemon, egg. Candidates are from the same food group and used in at least 100 recipes.
