What each ingredient does

Fine sugar
Forms the bulk of the drops and hardens into a crisp, sweet candy as it cools.
Lemons
Provide the acidity and juice that flavour the drops and help the sugar stay smooth.
Essence of bergamot
Adds a concentrated citrus aroma that gives the drops their distinctive flavour.

The step that matters

Stir the mixture over low heat for 3-4 minutes. Sugar can scorch or crystallise if heated too fast or too long. Gentle heat dissolves the sugar fully and keeps the mixture smooth, so the drops set clear and hard rather than grainy or brown.

Swap the bergamot

How well each one fits the dish's main ingredients (sugar, lemon):

  1. Orangefits better
