Cocoanut Cream Patties

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Roll out the puff paste to 1/4 inch thick and cut into 2-inch fluted shells.

  2. Mark the tops with a small round cutter to break the surface.

  3. Place the shells on papered baking tins and bake in a 350°F (175°C) oven until golden.

  4. Once cooled, remove the centers of the shells and fill with crumbs.

  5. In a bowl, whisk the egg whites to stiff peaks, then add lemon flavoring and enough desiccated coconut to form a soft paste.

  6. Fill the shells with the coconut mixture and top each with a ball of meringue.

  7. Dry the filled shells in the oven.
