Ingredients

Directions

  1. Ensure all ingredients are fresh and of good quality.

  2. Cream the sugar and butter together.

  3. Prepare the fruits: seed the raisins and dredge with flour; rinse and dry the currants; cut citron into small bits; blanch and pound almonds with rosewater or lemon extract.

  4. Sift the flour and break the eggs, separating the yolks and whites, beating them separately.

  5. If eggs are frozen, place them in cold water for a few minutes before using.

  6. Warm the flour and butter slightly if the weather is cold, but do not melt the butter.

  7. Dissolve the soda or saleratus in sweet milk or water before adding to the mixture.
