Molasses Taffy

Ingredients

Directions

The book gives no oven temperature. The 245°F (118°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the syrup

  1. Combine sugar, glucose, and water in a large pot.

  2. Cook the mixture until it reaches 245°F (118°C), stirring occasionally.

  3. Add molasses and butter to the pot.

  4. Stir constantly and continue cooking until the mixture reaches 260°F (127°C).

Pull and set

  1. Pour the mixture onto a greased slab.

  2. Pull the mixture on the slab until it reaches the desired consistency.

  3. Sprinkle nuts over the slab just before pouring the candy to cool.

What each ingredient does

Sugar
Provides the sweet base and, as it cooks, the firm candy structure.
Glucose
Inhibits crystallization, keeping the taffy smooth and chewy rather than grainy.
Dark molasses
Adds deep flavor and color, and extra moisture that keeps the taffy soft.
Butter
Adds fat that softens the texture and gives the taffy a tender bite.

The step that matters

Stir constantly at the final temperature. Once molasses and butter are added and the mixture nears 260°F, sugar can crystallize or scorch on the pot bottom. Constant stirring keeps the syrup even and prevents grainy or burnt candy.
