Sweetmeat Biscuits

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the biscuits

  1. Cut the baked Naples biscuits into small pieces, about 1.5 inches square and 1 inch thick.

  2. Place the pieces on a wire rack and crisp them in a 400°F (200°C) oven.

Ice and finish

  1. In a bowl, mix the egg whites, sugar, and orange flower water to make icing.

  2. Dip one side of each biscuit in the icing.

  3. Chop the sweetmeats into small pieces and sprinkle them over the iced side of the biscuits.

  4. Return the biscuits to the wire rack without paper and place them back in the oven to harden the icing.

What each ingredient does

Naples biscuits
Form the crisp, dry base that the icing and sweetmeats sit on.
Egg whites
Whip with sugar into an icing that dries and hardens in the oven.
Sugar
Sweetens the icing and helps it set into a hard, glossy coating.
Sweetmeats
Add chewy, bright candied flavour and decoration on the iced surface.

The step that matters

Hardening the icing in the oven. The icing must dry and harden without browning too much. Egg white and sugar set as moisture evaporates, so the biscuits need enough time in a warm oven, watched closely so the sugar does not scorch.

Swap the orange

How well each one fits the dish's main ingredients (biscuit, egg, sugar, lemon, angelica):

  1. Vanillafits better
  2. Orangethe original
  3. Limefits about as well
  4. Raisinfits about as well

Fit is the average pairing score against biscuit, egg, sugar, lemon, angelica. Candidates are from the same food group and used in at least 100 recipes.
