Fresh Apricot Biscuits

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the apricot jam

  1. Place ripe apricots in an earthen jar and put the jar in a copper pot.

  2. Fill the pot with water around the jar and cover the pot tightly.

  3. Simmer for 4 to 5 hours.

  4. Pass the apricots through a sieve until the next morning.

Make the biscuits

  1. Mix powdered sugar into the jam and beat the mixture well.

  2. Whisk 8 egg whites until strong, then mix them with the jam.

  3. Fill paper molds with the mixture.

  4. Place the filled molds in a preheated oven at 400°F (200°C).

  5. Store the biscuits in a dry box after baking.

What each ingredient does

Ripe apricots
Provide the fruit base and flavour for the jam that gives the biscuits their body.
Powdered sugar
Adds sweetness and helps the mixture hold together when beaten.
Egg whites
Whisked to foam, they give the biscuits structure and lift as they set in the oven.

The step that matters

Whisking the egg whites. Egg whites must be whisked until strong, meaning they hold stiff peaks. Under-whisked whites collapse and lose the lift needed to set the biscuits, while folding them in gently keeps the foam from deflating.

Swap the apricot

How well each one fits the dish's main ingredients (sugar, egg):
