What each ingredient does

Lemons
Provide the acidity and bright flavor that define the ice.
Syrup
Adds sweetness and softens the ice by lowering its freezing point.
Preserved orange peel
Adds concentrated citrus aroma and bitter-sweet flavor throughout the ice.
Preserved lemon peel
Adds concentrated lemon aroma and flavor throughout the ice.
Angelica
Adds a distinctive herbal, aromatic flavor and chewy texture in small pieces.

The step that matters

Pass the mixture through a sieve before freezing again. Sieving removes fibers, seeds and lumps from the partly frozen mixture, giving a smoother texture so the ice does not turn grainy or icy when refrozen.

Swap the angelica

How well each one fits the dish's main ingredients (lemon, syrup, orange):

  1. Cinnamonfits better
  2. Gingerfits better
  3. Thymefits better
  4. Angelicathe original

Fit is the average pairing score against lemon, syrup, orange. Candidates are from the same food group and used in at least 100 recipes.
