Greengages Preserved
Ingredients
Directions
Prick the greengages to the stone with pins.
Place them in a preserving pan with salt and water.
Heat gently, stirring with a wooden spoon to prevent sticking.
Transfer to a tub with the same liquid until the next day.
Heat again in the same liquid until the color changes.
Store in the same liquid until the next day.
Finish heating until the stone moves easily and the greengages turn a beautiful green.
Remove each greengage into a pan of cold water.
Carefully transfer to a preserving pan with weak syrup and simmer for a few minutes.
Remove to flat dishes and cover with syrup, then lay kitchen paper over the top.
Let sit for three days on the dishes.
Transfer to sieves and strengthen the syrup by boiling sugar until it reaches the crack stage.
