Bergamot Wafers

Ingredients

Directions

  1. Squeeze the lemons into a small pan.

  2. Mix in enough powdered sugar to achieve the same thickness as your lemon wafers.

  3. Add a few drops of essence of bergamot and mix well with the egg white.

  4. Beat the mixture until it is very white; if it becomes too thick, add the juice of one more lemon.

  5. Be careful not to add too much bergamot essence to avoid bitterness.

  6. Prepare the wafers in the same manner as your lemon wafers.
