Ginger Candy Tablets

Ingredients

Directions

The book gives no oven temperature. The 238°F in the steps was added when the recipe was transcribed, as a starting point.

  1. Boil the sugar with just enough water to dissolve it until it reaches the ball stage (238°F or 114°C).

  2. Add the acetic acid or lemon juice and the essence of ginger.

  3. Rub the sugar with the back of a silver spoon against the sides of the sugar boiler to whiten and grain it, giving it an opalized appearance.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Sugar and ginger barely smell alike, yet cooks put them together in 14,054 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Loaf sugar
Forms the bulk of the candy and sets into a firm, crisp tablet as it cools.
Acetic acid or lemon juice
Acidity helps keep the sugar from recrystallizing too coarsely, giving a smoother texture.
Essence of jamaica ginger
Provides the characteristic ginger aroma and flavour.

The step that matters

Rubbing the sugar to grain it. Rubbing the cooked sugar against the boiler sides triggers controlled crystallization, which turns the syrup opaque and white. Stopping too early leaves the candy clear and glassy, while overworking can make it grainy and crumbly.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, ginger):

  1. Lemonthe original
  2. Orangefits about as well
  3. Limefits less well
  4. Vanillafits less well

Fit is the average pairing score against sugar, ginger. Candidates are from the same food group and used in at least 100 recipes.
