  1. Preheat the oven to 350°F (175°C).

  2. Make small balls of poultry force-meat using a small coffee spoon.

  3. Dip the balls in jelly broth and drain on a napkin.

  4. Place the balls evenly inside the vol-au-vent.

  5. Fill the vol-au-vent with a ragout of cocks’ combs, lambs’ sweetbreads, truffles, mushrooms, lobsters’ tails, and whole brains.

  6. Cover the filling with German sauce.

  7. Bake until the crust is golden and the filling is heated through.
