Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Loaf sugar
Forms the crystalline sugar structure that sets into a crisp, brittle candy.
Egg white
Traps air as it is whipped into the syrup, making the mixture rise and turn light.
Lemon juice
Adds acidity that helps keep the sugar smooth and stabilizes the foam.

The step that matters

Stirring the mixture as it rises and deflating it. Sugar syrup cooled to the crack stage sets quickly, so the mixture must be worked while it is still fluid. Stirring to deflate and then letting it rise again keeps the foam light and airy, and pouring too late leaves it dense.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits about as well
  3. Lemonthe original
  4. Datesfits less well

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
