  1. Heat the almonds in a pan, stirring until hot.

  2. Add 1 tablespoon of gum and stir until the gum coats the almonds.

  3. Dredge the almonds in a little starch powder for an additional coating.

  4. Use a funnel to coat the almonds with boiled sugar and gum.

  5. Separate the almonds and let them dry on a cane sieve to remove sugar fragments.

  6. Clean the pan and repeat the sugar, starch, and gum coating process five more times.

  7. Dry the comfits at a very low heat until the next day.

  8. Apply six more coatings as described, then dry in low heat to whiten.
