Almond Cakes

Oven, in the book's wordsA slack oven

Ingredients

Directions

The book says “a slack oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Remove the skins from the almonds and pound them finely with whole eggs.

  2. Add the powdered sugar and lemon zest, mixing well in a mortar.

  3. Transfer to a basin and stir in the egg yolks until the mixture is white and resembles sponge paste.

  4. Beat the egg whites until stiff and gently fold them into the mixture.

  5. Lightly mix in the flour, being careful not to deflate the batter.

Bake

  1. Butter a cake mold.

  2. Place 10 sheets of paper underneath and 1 on top.

  3. Bake in a 300°F (150°C) oven for 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the main body, richness and nutty flavor of the cake.
Eggs
Whipped whites give lift and airiness, while yolks bind and enrich the batter.
Powdered sugar
Sweetens the batter and dissolves smoothly into the almond and egg mixture.
Flour
Adds light structure so the cake holds its shape after baking.
Lemon zest
Adds bright citrus aroma that complements the almonds.

The step that matters

Folding in the egg whites. Stiff whites hold air bubbles that make the cake rise. Folding gently keeps those bubbles intact, while vigorous stirring would deflate the batter and leave a denser cake.

Swap the lemon

How well each one fits the dish's main ingredients (almond, sugar, egg, flour):

Fit is the average pairing score against almond, sugar, egg, flour. Candidates are from the same food group and used in at least 100 recipes.
