Cinnamon Comfits

Ingredients

Directions

  1. Soak the cinnamon in warm water for 2-3 hours until soft.

  2. Cut the cinnamon into thin pieces, about ½ inch long.

  3. Dry the cinnamon in the stove until sufficiently dry.

  4. In a pan over a charcoal fire, whisk syrup over the cinnamon while shaking the pan.

  5. Repeat this process 2-3 times a day until the cinnamon is white and has a good consistency.

  6. Once white, cover the cinnamon with syrup using a ladle, giving eight small charges and drying after each charge.

  7. Sift the cinnamon to remove dust each time before drying.
