Orange Hearts

Oven, in the book's wordsA slack oven

Ingredients

Directions

The book says “a slack oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Combine yolks of eggs, powdered sugar, preserved orange peel, finely pounded almonds, rose water, and lemon raspings in a bowl.

  2. Stir the mixture with a wooden spoon in a circular-bottomed pan until it forms a light paste.

  3. Whisk the egg whites until stiff peaks form.

  4. Gently fold the whisked egg whites into the paste.

  5. Sift the flour.

  6. Carefully fold the sifted flour into the mixture.

Prepare the tins

  1. Preheat the oven to 300°F (150°C).

  2. Butter heart-shaped tins.

  3. Line the tins with five sheets of paper.

Bake and serve

  1. Pour the mixture into the prepared tins.

  2. Ice the biscuits before baking.

  3. Bake until lightly golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Egg whites whipped to stiff peaks give the batter lift, and yolks add richness and binding.
Sugar
Sweetens the batter and helps give the biscuits a crisp, golden surface.
Sweet almonds
Provide the bulk and nutty flavour of the batter, giving a tender crumb.
Flour
Adds structure so the batter sets into a firm biscuit once baked.
Preserved orange peel
Adds concentrated citrus aroma and a bitter-sweet flavour to the batter.

The step that matters

Folding the egg whites into the paste. Whisked egg whites trap air that gives lift. Folding gently keeps that air in; stirring hard deflates the foam and leaves dense biscuits.
