Calf's Liver a LA Brochette

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Cut the liver and bacon into small, equal-sized pieces.

  2. Thread the liver and bacon alternately onto tinned skewers.

  3. Dredge the skewers with pepper.

  4. Place the skewers in a dripping pan in the oven at 400°F (200°C).

  5. Turn the skewers over two or three times while cooking.

  6. Once cooked, place the liver and bacon on buttered toast.

  7. Hold the toast in place with a fork while removing the skewers.

  8. Serve immediately.
