Koast Fillet of Beef, with Mushrooms
Ingredients
Directions
The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Preheat the oven to 400°F (200°C).
Trim the fat from the top side of the fillet, leaving a thin layer.
Heat a pan and add the fillet and trimmed fat.
Pour in 1 pint of water and add a little coarse sea salt.
Let the meat stew and bake in the pan until the water is nearly gone, about 1 hour.
Increase the oven temperature and roast the fillet for 30 to 45 minutes until medium rare.
Avoid piercing the meat; roll it over in the pan using a broad fork and spoon to keep it shiny.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
