Lemon Biscuits

Ingredients

Directions

Prepare the dough

  1. Finely pound the almonds in a mortar.

  2. Add the egg whites and continue to pound until you have a fine paste.

  3. Mix in the powdered sugar thoroughly.

  4. Zest the lemons and add the zest to the almond and sugar mixture.

Shape and bake

  1. Drop small rounds of the mixture onto a sheet of paper, about the size of a nutmeg, leaving space between each.

  2. If the oven is too hot, place sheets of paper under the biscuits to prevent scorching.

  3. Bake until set, then let cool completely before removing from the paper.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the bulk and nutty flavour of the biscuit base.
Whites of eggs
Bind the pounded almonds into a paste and help the biscuits set.
Powdered sugar
Adds sweetness and dry bulk so the mixture can be shaped into rounds.
Lemons
Zest supplies the bright lemon aroma and flavour.

The step that matters

Watching the oven heat. If the oven runs too hot, the sugar-rich biscuits can scorch on the bottom before they set. Placing paper under them acts as a buffer against direct heat.

Swap the almond

How well each one fits the dish's main ingredients (egg, sugar, lemon):

  1. Pistachiofits about as well
  2. Milletfits about as well
  3. Almondthe original
  4. Chickpeafits about as well

Fit is the average pairing score against egg, sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
