Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Powdered sugar
Provides sweetness and, when sifted fine, dissolves smoothly into the lemon juice.
Lemons
Supply the acidity and liquid that give the drops their bright, sharp flavour.
Essence of bergamot
Adds a concentrated citrus aroma that gives the drops their distinctive perfume.

The step that matters

Heating the mixture over low heat. Gentle heat helps the sugar dissolve and thicken without scorching or caramelising. Too much heat can make the sugar darken and turn the drops brittle or sticky, so keep the heat low and the time short.

Swap the bergamot

How well each one fits the dish's main ingredients (sugar, lemon):

  1. Orangefits better
  2. Limefits better
  3. Vanillafits better
