Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lemons
Provide the peel for aroma and the juice for acidity and flavor in the syrup.
Brandy
Extracts the oils from the lemon peel and adds alcohol that preserves the wine.
Lump sugar
Sweetens the wine and balances the acidity of the lemon juice.
Egg whites
Bind fine particles and clarify the liquid as they set and are removed.

The step that matters

Sealing and aging in the cask. The cask must be sealed tightly so air cannot reach the liquid. Air allows oxidation and spoilage, which would spoil the flavor during the long six-month rest.

Swap the lemon

How well each one fits the dish's main ingredients (brandy, sugar, syrup, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Apricotfits better

Fit is the average pairing score against brandy, sugar, syrup, egg. Candidates are from the same food group and used in at least 100 recipes.
