Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lemons
Peel adds aromatic oils, and juice adds the sharp acidity that defines the flavour.
Syrup
Dissolved sugar sweetens the ice and lowers its freezing point for a softer texture.
Egg whites
Whipped whites add foam and airiness, making the frozen ice lighter in texture.

The step that matters

Mixing in the whipped egg whites. Fold the whites in just before the mixture sets. If it is already firm, they cannot blend in evenly, and if it is too liquid, the foam collapses and the texture turns watery.

Swap the lemon

How well each one fits the dish's main ingredients (syrup, egg, sugar):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonthe original
  4. Figfits about as well

Fit is the average pairing score against syrup, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
