Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Loaf sugar
Forms the bulk of the candy and sets into a hard, glassy texture when cooled.
Cream of tartar
Acid that helps prevent crystallisation, keeping the syrup smooth and clear.
Powdered tartaric acid
Adds a sharp sour flavour that gives the drops their characteristic tang.

The step that matters

Cooking the sugar to the caramel stage. Sugar syrup must reach the right temperature to set hard when cooled. Too little cooking leaves the drops sticky, while overcooking can scorch the sugar and make it bitter.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
