What each ingredient does

Elder flowers
Provide the floral aroma that flavours the steeped water.
Lemon juice
Adds acidity that balances the sweetness of the syrup.
Syrup
Adds sweetness and softens the texture of the frozen ice.
Madeira wine
Adds rich flavour and aroma to the frozen ice.

The step that matters

Pouring the Madeira wine gradually once frozen. Alcohol lowers the freezing point, so wine added to an already frozen mixture can soften and melt it unevenly. Adding it slowly while the ice is worked helps keep an even, scoopable texture.
