Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Preheat your oven to 350°F (175°C).

  2. In a mixing bowl, cream together the butter and powdered sugar until well combined.

  3. Add the eggs one at a time, mixing well after each addition.

  4. Gently fold in the flour and lemon zest until just combined.

  5. If desired, mix in currants, raisins, preserved peel, or caraway seeds before baking.

Bake

  1. Pour the batter into small round cake pans lined with parchment paper.

  2. Bake in the preheated oven until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to trap air, giving the cake a tender, rich crumb.
Eggs
Provide structure as they set and add richness and moisture to the crumb.
All-purpose flour
Forms the gluten network and sets the cake's structure as it bakes.
Powdered sugar
Sweetens the batter and, creamed with butter, helps create a fine, even texture.

The step that matters

Folding in the flour and lemon zest. Overmixing once flour is added develops gluten, which toughens the cake and makes it dense. Fold gently and stop as soon as the flour is just combined.

Swap the currant

The recipe marks currant as optional. How well each one fits the dish's main ingredients (butter, sugar, egg, flour, lemon):

  1. Raisinfits better
  2. Vanillafits better
  3. Figfits better
  4. Currantthe original

Fit is the average pairing score against butter, sugar, egg, flour, lemon. Candidates are from the same food group and used in at least 100 recipes.
