What each ingredient does

Lemons
Provide the juice and peel that give the ice its bright, sharp acidic flavour and aroma.
Egg whites
Whipped to foam, they add airy lightness and a smooth, fluffy texture to the frozen ice.
Sugar
Sweetens the lemonade and lowers the freezing point, keeping the ice soft rather than hard.
Syrup
Adds sweetness and body, helping the mixture freeze to a smooth texture.
Rum
Alcohol adds flavour and keeps the ice from freezing rock hard.
Maraschino liqueur
Adds sweet, aromatic cherry-almond flavour to the finished ice.

The step that matters

Combining the whipped egg whites with the hot syrup. Pouring the boiled syrup over the whipped whites while mixing well cooks and stabilises the foam, so it stays light instead of collapsing. Letting the mixture cool before combining with the lemon ice keeps the foam from melting and deflating.
