Of Spinning Sugar

Ingredients

Directions

  1. Prepare moulds of your choice (vases, baskets, etc.) using copper, tin, or glass. Grease them lightly with butter.

  2. Boil clarified sugar in a clean copper pan until it reaches a crack stage. Use a damp sponge to keep the edges free of sugar bubbles.

  3. At the crack stage, add a drop or two of lemon juice to prevent the sugar from graining.

  4. Remove the pan from heat and let it cool slightly. Use a spoon or a tool with prongs to dip into the sugar.

  5. Spin the sugar by shaking your hand, forming threads inside the mould without letting it fall in drops.
