Chocolate Biscuits

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Place biscuit paste flavored with vanilla into large paper or tin cases.

  3. Bake without icing for about 10-15 minutes until done and cold.

  4. Cut the baked biscuits into squares, lozenges, or desired shapes.

  5. In a bowl, mix the egg white with fine sifted sugar to make royal icing.

  6. Melt scraped chocolate in the oven and add to the icing to your taste.

  7. Ensure the icing is liquid, well mixed, and shiny.

  8. Spread the icing over the biscuits with a knife.

  9. Dry the iced biscuits at the mouth of the oven.

  10. Color the icing as desired by adding essence.
