Directions

Make the toffee

  1. Melt the butter in a saucepan over low heat.

  2. Stir in the sugar and heat carefully to prevent burning.

  3. Once the mixture boils, stir quickly for a few minutes until it turns light brown.

  4. Add a squeeze of lemon juice.

  5. Test a small amount in very cold water.

  6. If it crisps, remove from heat immediately.

Flavour and pour

  1. If desired, add a few drops of essence of lemon or more lemon juice.

  2. Pour onto buttered plates before it cools completely.

What each ingredient does

Granulated sugar
Forms the body of the toffee and, as it cooks, browns and sets into a firm, brittle candy.
Fresh butter
Adds fat for richness and a smooth, tender bite in the finished toffee.
Lemon juice
Adds bright acidity that balances the sweetness and gives a lemon flavour.

The step that matters

Remove from heat as soon as it crisps. As water evaporates, the sugar concentration rises and the mixture hardens when cooled. Left on the heat too long, the sugar keeps caramelising, so it can darken, turn bitter, and burn quickly.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (sugar, butter):

  1. Vanillafits better
  2. Figfits better
  3. Peachfits better
  4. Lemonthe original

Fit is the average pairing score against sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
