Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Loaf sugar
Forms the crystalline candy structure as the syrup is boiled and then pulled.
Vinegar
Adds a little acidity that helps keep the sugar from recrystallising into large, coarse crystals.

The step that matters

Pull until it becomes white. Pulling incorporates air and makes the sugar crystals form many tiny grains, which turns the candy white and opaque. Pulling too early, while the candy is still too hot or too cool, changes how it aerates and sets.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, vinegar):

  1. Vanillafits better
  2. Strawberryfits better
  3. Pineapplefits better
  4. Lemonthe original

Fit is the average pairing score against sugar, vinegar. Candidates are from the same food group and used in at least 100 recipes.
