Ingredients

Directions

Make the nougat

  1. Melt sugar in a saucepan over low heat with lemon juice, stirring gently until smooth.

  2. Add warm prepared almonds and blend together.

  3. Alternatively, dissolve sugar in water with lemon juice, boil until reaching the crack stage, then stir in warm almonds.

  4. Ensure almonds are dry and slightly toasted before use.

Shape and cut

  1. Turn the mixture onto an oiled slab and roll to the desired thickness.

  2. Cut into shapes using oiled cutters or a knife.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Castor sugar
Melts and sets into the firm, sweet body of the nougat.
Prepared almonds
Provide texture and bite, and add a toasted, nutty flavour.

The step that matters

Boil the sugar to the crack stage. Sugar syrup must reach the correct temperature to set firm when cooled. Too little boiling leaves the nougat soft and sticky, while overheating makes it hard and brittle.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, almond):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits better
  4. Lemonthe original

Fit is the average pairing score against sugar, almond. Candidates are from the same food group and used in at least 100 recipes.
