Oyster

Ingredients

Directions

Prepare the oysters

  1. Open the oysters and preserve their liquor, straining it through a cloth or sieve.

  2. Remove the gills from the oysters and place them in a stewpan with their liquor.

  3. Simmer for about 5 minutes to scald, then remove and cut into small pieces.

Make the stew

  1. Return the oysters to the stewpan with their liquor, adding anchovy essence and enough milk or cream to cover them.

  2. Add lemon slice, mace, pepper, and salt.

  3. Mix butter with flour to thicken the sauce, then add to the stewpan.

  4. Boil for about 10-15 minutes, stirring constantly.

  5. Remove the lemon and mace, squeeze lemon juice into the sauce, and fill the pan.

What each ingredient does

Oysters
Provide the main flavour and tender texture of the stew.
Milk or cream
Forms the rich, creamy liquid base that carries the stew.
Flour
Thickens the sauce as it cooks, giving it body.
Butter
Adds richness and helps the flour blend smoothly into the sauce.
Anchovy essence
Adds a savoury depth that enhances the oyster flavour.

The step that matters

Boil for about 10-15 minutes, stirring constantly. Flour needs to boil to fully thicken and lose its raw starchy taste, while constant stirring prevents the milk or cream from scorching or catching on the bottom of the pan.

Swap the mace

  1. Parsleyfits better
  2. Thymefits better
