Ingredients

Directions

The book says “a warm oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. In a mortar, pound the sweet and bitter almonds until very fine.

  2. Break an egg into a cup and add half of it to the almonds; grind until smooth, adding more egg if the mixture becomes oily.

  3. Zest half a lemon over the loaf sugar, then crush the sugar to a powder and mix it with the almonds.

  4. Add enough egg yolks to create a soft batter, then mix in the flour until well combined.

Bake and finish

  1. Pour the mixture into a buttered tin about 2 inches deep or a paper case of the same depth.

  2. Bake in a warm oven at 350°F (175°C) until set.

  3. Once cooled, cut into shapes and decorate with icing or other ornaments.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the main bulk and nutty flavour of the batter.
Bitter almonds
Add a deeper, aromatic almond flavour to the batter.
Egg
Binds the ground almonds and helps the batter set when baked.
Loaf sugar
Adds sweetness and helps give the bread a tender crumb.
Egg yolks
Add richness and moisture, giving the batter a soft consistency.
Flour
Adds structure so the batter holds its shape after baking.

The step that matters

Adding the egg while grinding the almonds. Almonds release oil as they are ground, so the mixture can turn greasy and separate. Adding egg gradually keeps it smooth and emulsified, which gives an even, cohesive batter.
