Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Whipped, it gives the dessert a light, rich body and creamy texture.
Barberry jelly
Provides the main fruity flavor and tartness, along with its color.
Isinglass
Acts as a gelling agent so the mixture sets firm when chilled.
Lemon juice
Adds acidity that brightens the flavor and balances the sweetness.

The step that matters

Dissolving the isinglass before adding it. Isinglass must be fully dissolved before it is mixed in, because any undissolved granules will not set evenly and can leave the cream gritty or patchy once firm.
