Ingredients

Directions

The book says “a warm oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Pound the tapioca until small.

  2. Boil the tapioca in the milk and simmer gently until soft.

Make the custard

  1. In a bowl, break the eggs and egg yolks, then beat them with a fork.

  2. Add the brandy, butter (while the tapioca is hot), nutmeg, and sugar to the egg mixture.

  3. Mix everything together thoroughly.

Bake

  1. Place a rim of puff pastry around your baking dish.

  2. Pour the mixture into the dish and bake in a warm oven at 350°F (175°C) until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Softens and thickens in the hot milk, giving the pudding its body.
Milk
Forms the liquid base that the tapioca swells in and the custard sets from.
Eggs
Coagulate when heated, giving the pudding its set structure.
Egg yolks
Add richness and a smoother, creamier texture.
Butter
Adds fat for richness and a silky mouthfeel.
Brandy
Adds aroma and a warm, distinctive flavour.

The step that matters

Bake until just set. Egg proteins set with heat, so the pudding firms as it bakes. Overbaking tightens them too far, which can make the custard grainy and weepy. Remove it once it is set but still slightly wobbly in the centre.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, egg, brandy, butter, sugar):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Clovefits less well
  4. Gingerfits less well

Fit is the average pairing score against milk, egg, brandy, butter, sugar. Candidates are from the same food group and used in at least 100 recipes.
