Apricots in Brandy

Ingredients

Directions

  1. Choose fine pale apricots that are free from spots and not very ripe.

  2. Simmer the apricots in a pan of water over low heat until tender but not soft enough to lose their shape.

  3. Lay the apricots on a cloth folded three or four times and cover them until dry.

  4. Mix a little clarified sugar into some white brandy.

  5. Carefully place the apricots in a glass jar and pour the brandy and sugar mixture over them until they are well covered.

  6. Tightly seal the jar with a bladder.
