What each ingredient does

Egg yolks
Thicken the custard as they set on gentle heat and add richness.
Thin cream
Provides fat and body, giving the frozen ice cream a smooth, rich texture.
Sugar
Sweetens the base and lowers the freezing point, keeping the ice cream softer.
Candied citron, orange, and lemon peel
Adds chewy texture and concentrated citrus flavour throughout the ice cream.

The step that matters

Heating the custard over low heat. Egg yolks thicken through gentle heat, but if the mixture boils or heats too fast, the proteins scramble and the custard turns grainy. Constant stirring spreads heat evenly and prevents curdling at the base.

Swap the nuts

How well each one fits the dish's main ingredients (egg, cinnamon, lemon, orange, sugar, cream, pistachio):

  1. Almondfits better
  2. Cashew nutfits better
  3. Chestnutfits better
  4. Nutsthe original

Fit is the average pairing score against egg, cinnamon, lemon, orange, sugar, cream, pistachio. Candidates are from the same food group and used in at least 100 recipes.
