Ingredients

Directions

The book says “a warm oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Pound the bitter and sweet almonds in a mortar until fine.

  2. In a bowl, whisk the eggs until frothy.

  3. Grate the lemon zest, nutmeg, and cinnamon.

Make the pudding

  1. In a saucepan, combine the milk and ground rice over low heat, stirring until thickened.

  2. Remove from heat and stir in the butter, almonds, eggs, spices, and sugar to sweeten.

  3. If desired, add washed currants.

  4. For extra flavor, add brandy with the spices before baking.

Bake and serve

  1. Line a dish with puff pastry, pour in the pudding mixture, and bake in a warm oven (350°F/175°C) until set.

What each ingredient does

Eggs
Set the pudding and add richness and structure as they cook.
Ground rice
Thickens the milk into a creamy base that gives the pudding its body.
Milk
Forms the liquid base that the rice thickens and the eggs set into custard.
Butter
Adds fat for a rich, smooth texture and mouthfeel.
Almonds
Contribute nutty flavor and body to the pudding base.

The step that matters

Thicken the milk and rice before adding the eggs. Stirring the rice into the milk over low heat lets the starch gelatinize and thicken the base. Adding eggs to a very hot mixture can scramble them, so the base should be off the heat and slightly cooled before the eggs go in.

Swap the lemon

How well each one fits the dish's main ingredients (almond, egg, nutmeg, cinnamon, milk, rice, butter):

  1. Vanillafits better
  2. Coconutfits better
  3. Figfits better
  4. Lemonthe original

Fit is the average pairing score against almond, egg, nutmeg, cinnamon, milk, rice, butter. Candidates are from the same food group and used in at least 100 recipes.
