Butter Rolls

Oven, in the book's wordsA brisk oven

Ingredients

Directions

The book says “a brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. Combine the sponge, butter, salt, sugar, mace, and lemon flavor in a large bowl.

  2. Add enough flour to form a medium firm dough.

  3. Let the dough rise until it doubles in size.

Shape and proof

  1. Shape the dough into rolls on a floured surface.

  2. Mold the rolls into round shapes and allow them to proof.

  3. Brush the rolls with butter and roll them into long strips.

  4. Twist the strips into a rope shape and place them on baking pans so they touch lightly.

  5. Brush the rolls again with butter, let them proof, and bake in a preheated oven at 400°F (200°C) until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

White sponge
Provides the yeasted base that gives the dough its structure and rise.
Butter
Adds fat for a tender crumb and rich flavor, and helps browning in the oven.
Sugar
Adds sweetness and helps the crust brown as the rolls bake.
Flour
Builds the gluten network that gives the dough its medium firm body.
