Quaker Bread with Compressed Yeast

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Dissolve the yeast and glucose in warm water.

  2. Make a soft batter with some flour and let it stand for 20 minutes.

  3. Thin the batter with the remaining water.

  4. Add the cornmeal mush and lard, then mix to form a smooth dough.

  5. Let the dough rise until doubled in size.

  6. Punch down the dough, then let it rise again until it has risen halfway.

  7. Scale and mold the dough into pans.

  8. Allow the dough to proof again before baking.

  9. Bake in a preheated oven at 400°F (200°C) until golden brown.
