Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Dissolve the yeast in 1½ cups of warm water and add flour to make a soft batter.

  2. Beat the batter well and let it stand in a warm place for 20 minutes.

  3. Add the milk, remaining water, sugar, cornmeal, and salt to the batter to form a medium dough.

  4. Let the dough rise until doubled in size, then punch it down and let it rise again briefly.

  5. Scale and shape the dough, place it in pans, and allow it to proof for 45 minutes.

  6. Bake in a preheated oven at 400°F (200°C) until golden brown.
