Why it works: Cinnamon and allspice match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 5,536 recipes. Both carry estragole, which smells anise, licorice. The science ↓

Ingredients
Directions
The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Preheat the oven to 400°F (200°C).
In a large bowl, mix together the sugar, lard, eggs, molasses, milk, baking soda (dissolved in a little milk), flour, cinnamon, allspice, ginger, and vanilla extract until well combined.
Shape and bake
Drop spoonfuls of the mixture onto dusted baking pans.
Double the pans and bake in the preheated oven.
In warm weather, dredge the drops with granulated sugar to prevent sticking.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Flour
- Provides the structure that holds the drops together as they bake.
- Eggs
- Bind the batter and add structure and richness to the drops.
- Lard
- Adds fat that tenderizes the crumb and gives a soft texture.
- Molasses
- Adds moisture, sweetness and a deep flavor that helps browning.
- Baking soda
- Reacts with the molasses to produce gas that lifts the drops as they bake.
- Sugar
- Adds sweetness and helps the drops brown and stay moist.
The step that matters
Dredging in warm weather. Soft, sticky dough spreads and clings to pans when warm and fat is soft. Dredging the drops in granulated sugar forms a coating that keeps them from sticking together or to the surface.
Swap the ginger
How well each one fits the dish's main ingredients (sugar, egg, molasses, milk, flour, cinnamon, allspice):
- Nutmegfits better
- Clovefits better
- Cardamomfits about as well
