Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Heavy cream
Whipped and folded in to add lightness and a creamy, smooth texture.
Iced custard
Forms the creamy base that freezes into a rich, smooth dessert.
Crystallized fruit
Adds chewy texture and concentrated sweetness throughout the frozen mixture.
Brandy, rum, or liqueur
Softens the candied fruit and lowers the freezing point, keeping the texture scoopable.

The step that matters

Fold in the whipped cream gently. Whipped cream holds air in its foam. Vigorous stirring knocks that air out, leaving a dense, heavy result instead of a light frozen texture.
