Why it works: Almond and cinnamon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 3,514 recipes. Both carry eucalyptol, which smells eucalyptus, herbal. The science ↓

Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Cut the prepared dough into long narrow strips.
Twist each strip and coil it like a watch spring.
Place on pans, let rise, wash with egg wash, and bake at 400°F (200°C).
For another method, roll out the dough into a thin sheet about ¼ inch thick and 12 inches wide.
Brush the sheet with melted butter, sprinkle with currants, almonds, citron, powdered sugar, and cinnamon.
Roll up the sheet like a jelly roll and brush the outside with butter.
Cut the roll into slices about ½ inch thick and place cut side up on pans.
Let rise, wash with egg wash, and bake at 400°F (200°C).
Ice after baking or sprinkle sugar on top before baking.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
