Ingredients

Directions

Make the candy

  1. Combine granulated sugar, brown sugar, glucose (or cream of tartar), and water in a large pot and place on the fire.

  2. When the mixture boils, add molasses.

  3. When the mixture is almost done, add butter.

  4. Boil until the mixture reaches the soft crack stage (258°F to 260°F).

Shape and pull

  1. Pour the mixture into a greased pan, ensuring the candy is no more than ½ inch thick.

  2. As the mixture cools, turn the edges in quickly.

  3. When cool enough to handle, pull the candy onto a hook.

What each ingredient does

Granulated sugar
Provides the main sweetness and forms the crystalline base of the candy.
Brown sugar
Adds depth of sweetness and moisture to the candy.
Glucose
Inhibits sugar crystallisation, keeping the taffy smooth and chewy.
Molasses
Adds dark color, robust flavor, and extra moisture to the taffy.
Butter
Adds fat for a softer, more tender bite and smoother texture.

The step that matters

Boil to the soft crack stage (258°F to 260°F). Sugar concentration determines texture: undercooked taffy stays sticky, while overcooked taffy becomes hard and brittle. Hitting the target temperature sets the chewiness.

Swap the walnut

How well each one fits the dish's main ingredients (sugar, cream, molasses, butter):
