Why it works: Sugar and molasses are a kitchen classic. They rank in the top 11% of all ingredient pairs, and cooks put them together in 9,225 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓
Popcorn Balls
Ingredients
Directions
The book gives no oven temperature. The 238°F (114°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare the popcorn
Pop the desired amount of corn.
Dampen the inside of a washtub with a wet cloth and pour in the popped corn.
Make the syrup
In a pot, combine sugar, glucose, and water; cook to 238°F (114°C).
For molasses corn balls, add molasses and butter to the syrup and cook to the same temperature.
For pink corn balls, add food coloring to the syrup after removing from heat.
Coat and shape
Remove from heat and pour a little syrup over the corn while stirring until sticky.
Wet your hands and form the sticky corn into balls of your preferred size.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

What each ingredient does
- Sugar
- Forms the sweet syrup base that hardens as it cools, binding the popcorn together.
- Glucose
- Helps prevent the sugar from crystallising, keeping the syrup smooth and pliable.
- Molasses
- Adds deep flavour and darker colour to the syrup, giving the molasses version its character.
- Butter
- Adds richness and softens the texture of the syrup-coated corn.
The step that matters
Cook the syrup to 238°F (114°C). Syrup at this temperature has the right sugar concentration to set firm but still be workable. Undercooked syrup stays sticky and won't hold the balls; overcooked syrup turns brittle and hard to shape.
“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
